  1. Marinate the chicken breast with 1 tablespoon of soy sauce, a pinch of salt and pepper. Let it sit for about 15 minutes.
  2. While the chicken is marinating, slice the onion finely and mince the garlic. Keep aside.
  3. In a large frying pan, heat some sesame oil over medium-high heat. Add the marinated chicken and sauté until it is thoroughly cooked and golden brown in color. Remove from the pan and keep aside.
  4. In the same pan, add the sliced onions and minced garlic. Sauté until the onions turns translucent.
  5. In a small bowl, beat the eggs lightly. Add the beaten eggs to the sautéd onion and garlic in the pan. Lower the heat and scramble the eggs until they are just set.
  6. Add the spinach to the pan and stir until the spinach is wilted.
  7. Slice the cooked chicken and add back to the pan.
  8. Stir in the remaining soy sauce and chicken stock. Bring it to a simmer and season with salt and pepper.
  9. Serve it over the cooked rice.
  10. Sprinkle some sesame seeds on top for garnish before serving (optional).
